It is very important to season a wok before using it; normally, seasoning is required if your new wok is not pre-seasoned or if it has worn out in your used wok. A properly seasoned wok will not require too much of oil as food does not stick on to the surface. This post gives a simple procedure for seasoning a wok.

How to Season a Wok?

Follow the steps given below for seasoning a wok:

•	Wash the wok using soap and water; then dry it completely.
•	Heat it over a medium heat till it becomes very hot; at the precisely required heat, a drop of water will dance over the surface before drying completely.
•	Cover the inside of the wok with a layer of oil when it is still hot. Pour around 2 tablespoons of oil and brush it across the interiors. It is recommended to use peanut oil or palm oil.
•	Let the oil to cook on the surface of the wok; this creates a surface that is more stick-resistant.
•	Let the wok to cool down naturally before storing it away.

Seasoning a wok seals the cooking surface and prevents it from rusting.

Few Considerations for Buying a Wok

Given below are some of the points to be considered when buying a wok:

•	Decide which kind of material you want to use; woks made of carbon steel or cast iron are the two best options for a wok as they can distribute heat evenly.
•	Depending on the type of stove that you use, decide whether you prefer a flat bottomed or round bottomed wok. For gas stoves, you can choose both the types while flat-bottomed ones are apt for electric stoves.
•	If you are planning to by a wok to prepare large quantities of meals, then go in for a big size (16 inches). A 12 inches wok will do for a smaller family.
•	Purchase the wok from a reputed dealer; ‘The wok shop’ is one of the stores that specialize in woks and their parts.
•	Decide the investment that you are willing to make for the wok and find one within the range. However, the best woks are also reasonably priced.

Consider these things before deciding to buy a wok.

Preparation

The first and basic preparation for this recipe includes cooking rice atleast one day before so that it will be cooled and be crispier by the time of preparation; this is done basically to avoid the mushiness.

While preparing for the recipe, beat the eggs nicely until they are frothy along with little pepper and salt.

Now, place the wok on stove in high flame, add 2 tbsp of oil to it. Then, add the beaten egg to the wok, and stir it until the eggs are scrambled, after this you can clean the pan.

Wash and chop the green onions finely..

Again place the wok, add 2 tbsp of oil along with rice to it. Stir the rice and heat it for approximately 2-3 min; break the crumples with aid of a spoon or chopsticks.

Further, add soy sauce or oyster sauce to the wok, according to taste (preferably 1 to 2 tbsp).

After the thorough heating of rice, you can add scrambled egg to the pan and mix it well and stir green onion too.

Garnish the dish and serve hot to relish the taste.

This Wok recipe is not only really tasty to have, but can also be easily prepared in a matter of few minutes.

Take the chicken and cut them up to cubes; flavor up your chicken with peppercorns and salt.

Now the wok should be heated by setting the temperature to high. Once it is hot enough, you can add oil.

Spice up the dish with ginger, garlic and onions; don’t forget to stir-fry them for atleast a minute.

Finally, just add the chicken, broccoli, peppers, shiitake mushrooms, soy sauce, sherry, and chili paste. At this instant you can stir fry for 5 minutes or until the chicken and vegetables are equally cooked.

Now, garnish it with scallion, coriander, and red chili or you can add scallion and stir-fry it.

This Wok box recipe would blend well with Chow Mein noodles or white Jasmine rice, and what more do you need if it is even tossed in Wok box’s Szechwan sauce.
